Alot of defenses depend on what the other offenses are running, and in high school its probly more diverse than any other. 1 week you go against the spread and next week it may be the veer and the next power I.
Me personally I like the 5-3 which leaves a corner on each side and 1 safety (basically man coverage). My 2nd fave is the 4-4 and being aggresive with it. Good subject!!

I like a four man front... I like four linebackers but one of them is a backer in name only... Have to have a versatile guy there that can drop back in coverage of play all the way up if necessary. Quick corners and play a lot of cover 3.

At highschool level use to love 4-4 had all 8 run gaps covered and plenty of blitz opportunities as well coverage in 3 deep or 2 deep was sound but.....spread pretty much killed true 4-4 as it really stressed secondary and LB drop zones so a 4-3 with a extra coverage guy is a nice compromise ....but a 3-5-3 or 3-3-5 can cover all 8 run gaps, defends spread an allows for a ton of blitz pressure. And nose man can really put pressure on Offense. Gives advantages of odd front with 1 gap responsibilty
